This Chinese almond chicken recipe is one of the quick recipes I like to use often. When I think of easy dinner recipes, it comes into my mind, nutritious and delicious. I love it!


  • Chicken breast -- 2, boneless and skinless, cut into 1/2 inch cubes.
  • Vegetable oil -- 4 tablespoons
  • Whole almonds -- 1/2 cup, blanched
  • Cooking wine or dry sherry -- 2 1/2 tablespoons
  • Soy sauce -- 2 tablespoons
  • Cornstarch -- 2 teaspoons
  • Sugar -- 1 teaspoon, granulated
  • Ginger -- 1 teaspoon, minced
  • Snow peas -- fresh or 6 ounce frozen package, thawed
  • Green onions -- 2, sliced


  • Heat oil in wok over medium heat. Add almonds and toss until browned. Remove and set aside.

  • Add chicken to wok and stir 3 minutes.

  • Mix cooking wine, soy sauce, cornstarch, sugar and ginger in a bowl. Add into chicken and then stir until thickened.

  • Add snow peas, onion and almonds. Stir. Heat thoroughly and then serve with rice.
