This Chinese cashew chicken recipe is a dish favored by many. It has a place in easy chicken recipes. When I want to make one dish with both chicken and nuts, this is the one I'm going to choose among the Chinese chicken recipes.


  • Chicken breast -- 2, boneless, skinless, cut into small cubes
  • Cashew nuts -- 1 cup

  • Celery, or green bell pepper -- 1 cup, cut into small square pieces
  • Carrot -- 1 cup

  • Ginger -- 10 slices

  • Onion (optional) -- 1 cup, cut into small square pieces

For marinate:

  • Corn starch -- 2 teaspoon
  • Rice wine or dry sherry -- 1 teaspoon

For sauce:

  • Oyster sauce -- 1 tablespoon
  • Soy sauce -- 1 1/4 teaspoons
  • Water --1/8cup
  • White pepper powder -- a few dashes to taste
  • Sugar -- 1 teaspoon
  • Rice wine -- 1 teaspoon
  • Sesame oil -- 1/4 teaspoon
  • Salt -- to taste

Cashew Chicken RecipeInstructions:

Step 1:

  • Marinate the chicken for 15 minutes.
  • In the meantime, mix the sauce ingredients together and set aside.

Step 2:

  • Heat up a wok with 1 tablespoon of cooking oil over high heat, stir-fry the chicken until half-cooked. Dish out and set aside.

  • Add another 1 tablespoon of cooking oil into the wok and add the ginger slices, bell peppers and onions until aromatic.

  • Add the chicken back in, add in the cashew nuts and do a few quick stirs. Put in the sauce and stir continuously until the chicken meat is well cooked and well coated with the sauce.

  • Add desired salt, dish out and serve the Chinese Cashew Chicken hot with rice.
