Are 30 minute meals possible? This Chinese chicken and broccoli recipe will certainly let you know that the answer is a loud YES.


It's one of those Chinese chicken recipes that will give you an easy dinner after a busy day.

I myself enjoy easy meals, and easy chicken recipes are my favorites. This one is definitely on my list, delicious and nutritious.

Ingredients:

Main Materials:

  • Chicken breast -- 2, boneless, skinless, cubed
  • Broccoli -- 6 cups, (trim and slice stalks if you are not using those bagged broccoli florets and don't want to waste the greens. They'll give you the extra fibers. Cut large florets to medium size. Keep stalks and florets separate.)
  • Garlic -- 2 cloves, minced
  • Fresh ginger -- 1-inch pieces, peeled, minced
  • Soy sauce -- 1 tablespoon
  • Cornstarch -- 1 tablespoon
  • Salt -- 1 teaspoon for marinate, 1/4 for other use
  • Cooking wine or dry sherry -- 1 tablespoon
  • Sesame oil -- 1 tablespoon
  • Water -- 1/3 cup
  • Vegetable oil -- 3 tablespoons
  • Hoisin sauce -- 1 tablespoon

Optional Materials:

  • Toasted sesame seeds or other chopped toasted nuts
  • Scallions -- 3, whites only, thinly sliced at an angle
  • Red onion -- 1 cup
  • Red chili flakes -- 1 teaspoon
  • Sugar -- 1 tablespoon

Instructions:

Step 1:

  • Put the chicken and the scallion whites into a medium bowl to mix with half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, the cooking wine or the sherry, and the sesame oil. Marinate at room temperature for 15 minutes.

  • Mix the remaining cornstarch with 1/3 cup water.

  • Heat a wok or a large skillet with a tablespoon of the oil over high heat. Add the broccoli stems and red onions to stir-fry for 30 seconds.

  • Add the florets and the remaining garlic, ginger, 2 tablespoons of water, 1/4 teaspoon salt, and pepper. Stir-fry until the broccoli is bright green but still crisp. Put it onto a plate.

  • Heat the wok or skillet hot again with 2 more tablespoons of oil. Add the chicken and chili flakes to stir-fry until the chicken gets a little brown.

  • Add the Hoisin sauce, return the broccoli to the pan and toss to heat through.

  • Stir in the reserved cornstarch mixture and bring to a boil. (If the sauce is too thick, add more water as needed.)

  • Turn off the heat and spread sesame seeds on top; serve with rice.
