Chicken Salad Recipe


This Chinese chicken salad recipe is one of the healthy recipes for nutritious food. Tasty, simple.

If you've tried many chicken recipes but not this one, you might want to add it to your favorite list. It's one of the best Chinese salad recipes for healthy eating.


  • Boneless, skinless chicken breasts -- 2, shredded. (lean chicken breast is always a ingredient for healthy recipes)
  • Iceberg lettuce -- 3/4 head
  • Green onion -- 3 stalks
  • Toasted almonds -- 3 tablespoons, sliced
  • Cilantro -- 3/4 cup, chopped (optional)
  • Toasted sesame seeds -- 1 tablespoon (optional)
  • Maifun -- 3/4 pkg (In case you don't know what is maifun, it's a kind of sticky rice noodles). Some people like to use fried Chinese noodles (ex. Chun King, one can) or even Roman noodles to replace it if they don't have maifun at hand.


  • Sesame oil -- 1/8cup
  • Salad oil -- 1/8cup
  • Sugar -- 2 tablespoons
  • Rrice vinegar -- 3 tablespoons (if you don't have rice vinegar, you can use white vinegar in its place, just be sure to use a little less of it.)
  • Salt -- 1/2 teaspoon
  • Pepper -- 1/8 teaspoon

Now that we've got all the ingredients we need, time to make THE Chinese chicken salad recipe work.


Step 1:

  • Tear apart the cooked chicken breast into small, thin strips so that it can be in every bite.

  • Cut the iceberg lettuce into thin strips, too, about 1/4 inch wide. If they are too long, cut into shorter ones for easier eating.

  • Toast the sliced almonds and sesame seeds to make them crisp. Want a sign of their readiness? When they are popping, they are done. (It's optional if you are in a hurry, just add them in).

  • In the mean time, slice the green onions and chop the cilantro.

Step 2:

  • Put a saucepan over medium heat to heat the oil, throw in a few noodles to test the oil temperature. If the noodle puff up immediately, it's ready for you to put in all the noodles you prepared. (One reminder: the noodles will puff up to more than 5 times its size. You can add in the noodles a few times to make a few batches.)

  • Put all ingredients for the dressing in a bottle and shake it well.

Step 3:

Mix the dressing with the salad ingredients right before serving, then fold in the rice noodles carefully.

Here you go, your very own, delicious Chinese chicken salad, a perfect treat for a hot day.

(Tip: If you pour the dressing on the noodles, it will get soggy right away. You might not want that. )
