This dish can be a simple dinner in a busy day. My daughters love to take the fried rice to school as their lunch. I love to make it too; 10-15 minutes are all I need in the morning, that's how easy the fried rice recipe is. Not bad at all for your loved ones to have a nutrious and delicious hot lunch.
Cold cooked rice -- 3 cups, leftover is perfect
Veggie oil -- 1/2 cup
Onion -- 1/2, chopped
Celery, or asparagus -- 2 stalks, chopped
Carrots --2, diced, or use 1 cup frozen product
Frozen peas -- 1 cup
Eggs -- 3, beaten if you are not in a rush
Soy sauce -- 1/3 cup, or to taste
Pepper -- a pinch
Ham -- 1 cup (optional), you can also use whatever you have from leftover, such as pork chop, chicken breast, sausage or beef
Add oil to a wok or a large non-stick skillet over high heat, then add eggs.
When the egges are well cooked, add onion, celery, and carrots, stir fry 3 minutes and then add peas to cook for another 1-2 minutes.
Add pepper and soy sauce to mixt well.
Add rice; you can do it slowly by add one spoonful at a time, or add 3 cups in the wok at once. The latter is what I usually do. I use the spatula to break the rice and stir fry.
