Fortune cookies are available online and in Chinese markets. Some are individually wrapped and some are bagged. If you want to make fun fortunes to entertain your family and friends, or simply enjoy making them, here is a recipe .
1. Fortune sayings -- cut up and ready to insert.
2. Egg whites -- 3
3. Icing sugar (confectioner's sugar) - 1/2 cup, sifted
4. Unsalted butter -- 1 1/2 oz, melted
5. All-purpose flour -- 1/2 cup
Pre-heat Oven to 355 degrees Farenheit (180 degrees Celcius ).
Beat egg whites in a medium bowl. When it's frothy, add butter and icing sugar. Stir until smooth. Then add the flour and continue to stir until smooth. Set it aside for 15 minutes.
Draw three 3 1/2 inch circles on a sheet of baking paper and line your cookie tray with it.
Use a spatula to spread one and half teaspoons of the mixture in each circle.
Bake for 5 minutes or until slightly colored around edges and then take them out to work quickly.
Slide the spatula under one cookie to remove it from the tray.
Place one written fortune on top and fold in half. Then fold it in half again over a bowl or any blunt-edged object.
Put it on a wire rack to cool.
Repeat the process until you finish.
