This easy, delicious, refreshing cake has been my favorite mandarin orange dessert for many many years. I'm very glad to share it here. If you look for mandarin orange recipes, this is one you'll be glad you didn't miss.
Yellow cake mix -- 1 package (18.25 ounces)
Eggs -- 3
Orange extract -- 1 teaspoon (optional)
Vegetable oil -- 3/4 cup
Mandarin oranges segments -- 1 can (11 ounces)
Fresh Mandarin orange segments -- 9 or more for further decoration
Optional: strawberries, one sliced Kiwi, one more can of whipped topping
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine eggs, cake mix, oil and mandarin oranges; be sure to include its juice. Beat until smooth.
Grease a 9x13 inch pan. Pour batter into it.
Put the pan in the preheated oven and bake for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool while you prepare the topping.
To make the topping: In a large bowl, mix pineapple with juice and dry pudding mix until blended. Then spread on cake the way it is folded in whipped topping. Then put one layer of cream on top. For best result, put it in refregirator 3 hours before serving.
Use 9 orange segments to arrange on the top of the cake to resemble a sunflower. Here you have a "Sunflower Cake", good for special occations like birthdays or weekend parties.
You can decorate your cake further as shown on the picture to have a more impressive presentation. You may get lots of "Wows". Good luck!
