Mandarin Oranges

This orange salad uses mandarin oranges as main ingredients to make a tasty fruit salad.

Mandarin orange is a citrus fruit native to China and other part of Southeast Asia. Its peels can be easily removed, segments readily dividable and its taste zesty. That's why it is prized around the world.

Mandarin oranges are a good source of Vitamin C. They are low in saturated fat, sodium, and cholesterol, good for weight control too. You might have had our Mandarin Chicken Salad recipe which enjoys mandarin orange freshly. Now here is a salad recipe that uses canned mandarin oranges.

Ingredients:

  • Green onions -- 2, chopped
  • Celery stalks -- 2, chopped
  • Fresh parsley -- 2 tablespoons (or 1 tablesppon dried parsley)
  • Romaine lettuce, leaf lettuce, iceburg lettuce, or use the ready-to-use salad pkg
  • Mandarin oranges -- 1 can (11 oz.) drained
  • Almonds -- 1 pkg, sliced
  • Sugar -- 1/4 cup
  • Sweet and sour dressing

Instructions

  1. Prepare sweet and sour dressing. You can use the sweet and sour sauce if you have it, or you can make the rdressing by mixing the following:

    1/4 cup olive oil
    2 tablespoons sugar
    2 tablespoons vinegar
    1 teaspoon soysauce, or 1/2 teasoonp salt
    dash freshly ground pepper
    dash hot sauce

  2. Sugar the almonds on low heat. When the sugar is melted and almonds are coated, cool the almonds on wax paper, then break apart.
  3. Combine lettuces, onion, celery, parsley and orange slices. Pour dressing over salad and toss to coat well. Add almonds, mix well and serve.
  4. Enjoy this delicious salad.
