This orange chicken recipe is one of my favorite easy Chinese food recipes. Maybe you've tried it at fast food restaurants, but I personally think this one is much better. Orange and lemon juice will do the miracle.

Ingredients:

1. Chicken breasts -- 2 lbs, boneless skinless, cut into 1 inch cubes.

2 Marinade:

  • Chinese rice wine -- 2 tablespoons; dry sherry will do, too
  • Cornstarch -- 1 tablespoon
3. Sauce:
  • Orange juice -- 1/3 cup, (If you find the orange flavor too strong, dilute it with water to make it 1/3 cup. By the way, do you know that the orange juice is full of potassium that may good for your blood pressure?)
  • Lemon juice -- 1/4 cup
  • Soy sauce -- 2 1/2tablespoons
  • Sesame oil -- 1 teaspoon
  • Brown sugar--1 cup
  • Chili paste -- 1/4 teaspoon
  • Garlic -- 1/2 teaspoon, minced
  • Ginger root -- 1/2 teaspoon, minced
  • Oil for stir-frying, as needed

Instructions:

Step 1.

  • Marinade the chicken: Place the cubed chicken in a bowl and add the marinade ingredients.

  • Marinate the chicken for 30 minutes or so to let the flavor sink in.

Step 2.

  • In the meantime, prepare the sauce into one bowl. Don't add in the garlic and ginger yet.

  • Heat the wok and add oil, then add the garlic and ginger and stir-fry until aromatic.

  • Add the marinaded chicken and stir-fry until completely cooked. Take it out (some people like to push it up to the sides of the wok, making a well in the middle of the wok. I personally suggest to take it out to keep the tenderness).

  • Add the sauce into the wok, blend well over medium heat until boil .

  • Combine the sauce and the chicken. Stir-fry for another minute and here you go, Chinese orange chicken of your own. Serve it hot and ENJOY!
