This Chinese recipe for turkey lets you have an easy and quick way to enjoy your leftover turkey after Thanksgiving dinner. Turkey fried rice, simple yet delicious. You can also add something new to your holiday table with Chinese butternut squash soup recipe, turkey soup and Thanksgiving quotes.

Ingredients

  • Sesame oil or vegetable oil -- 1 tablespoon
  • Onion -- 1 (I use red onion if possible due to its anti cold nutrients. Good for the cold season.)
  • Turkey meat -- 1 1/2 pounds, cubed
  • Soy sauce -- 2 1/3 tablespoons
  • Carrots -- 2 cups, diced
  • Celery -- 2 stalks, chopped
  • Large red bell pepper -- 1, diced
  • Small green bell pepper -- 1, diced
  • Mushrooms or veggie of your choice -- 3/4 cup, chopped
  • Cooked rice -- 6 cups
  • Eggs -- 2

Directions

  1. Heat oil in a wok or a large skillet over high heat. Scramble eggs, then add onion and stir-fry until soft.
  2. Add turkey and stir-fry for 4-5 minutes.
  3. Add other vegetables stir-fry another 4 minutes.
  4. Put in rice and soy sauce, stir well.
  5. Serve hot.
