This roast chicken recipe is one of the few (if not only) Chinese chicken recipes I use to make a whole chicken. It's one of my favorite healthy chicken recipes.
Step 1:To toast chicken
Preheat oven to 400°F (200°C), in the meantime, mix the stuffing and put it into the chicken.
Place chicken in a roasting pan. Coat with sesame oil and bake for 30 minutes; reduce heat to 350°F (175°C) and bake for 1 hour.
Pour ½ cup of chicken stock in the bottom of the roasting pan, coat chicken with soy sauce and bake for another 10 minutes. Remove chicken from oven, place on a platter and keep warm.
Step 2:To make gravy
Put roasting pan over medium-low heat; pour chicken stock into pan and bring to a boil, stirring frequently.
Combine cornstarch and water in a small bowl to mix; stir this mixture (and stuffing if you have) into roasting pan and stir until a nice, thick gravy is made. Serve with roasted chicken.
