This roast chicken recipe is one of the few (if not only) Chinese chicken recipes I use to make a whole chicken. It's one of my favorite healthy chicken recipes.


  • Whole chicken -- 1, about 4 pound
  • Soy sauce -- ¾ cup
  • Sesame oil -- ⅓ cup
  • Chicken stock -- 1 cup
  • Cornstarch -- ⅛ cup
  • Water -- ¼ cup

For stuffing:(optional)

  • Onion -- 1, chopped
  • Garlic -- 4 cloves, minced
  • Ginger -- 1 inch piece, minced
  • Soy sauce -- 1 tablespoon
  • Sesame oil -- 1 tablespoon


Step 1:To toast chicken

  • Preheat oven to 400°F (200°C), in the meantime, mix the stuffing and put it into the chicken.

  • Place chicken in a roasting pan. Coat with sesame oil and bake for 30 minutes; reduce heat to 350°F (175°C) and bake for 1 hour.

  • Pour ½ cup of chicken stock in the bottom of the roasting pan, coat chicken with soy sauce and bake for another 10 minutes. Remove chicken from oven, place on a platter and keep warm.

Step 2:To make gravy

  • Put roasting pan over medium-low heat; pour chicken stock into pan and bring to a boil, stirring frequently.

  • Combine cornstarch and water in a small bowl to mix; stir this mixture (and stuffing if you have) into roasting pan and stir until a nice, thick gravy is made. Serve with roasted chicken.
